Slimming World Recipe: Meat and Egg Loaf

So four weeks ago, I began a weight-loss journey as I have a target to lose some weight before my holiday to Crete in May. I have dabbled with Slimming World a couple of times but have never fully committed. I have so far stuck to it and have lost 5lbs. I know it doesn't seem much but it's better than nothing and it's only the beginning. 

Anyway, you're here to read about this delicious Slimming World friendly recipe I have discovered. If you're a fan of meat then you'll love this treat I have in store for you. 

Meat and Egg Loaf

Time: 40 minutes

Serves: 4 people


  • 500g lean (5%) pork mince
  • sage
  • salt & pepper
  • bacon medallions ( I used 3)
  • 3 boiled eggs
  • You need a loaf tin to make this work properly. Once you've got one of those to hand you can begin
  • Get a large bowl and add the pork mine, sage and other seasoning you want
  • Get a hand held blender and whizz it all up 
  • Place half of the mix as a base in the loaf tin
  • Then place your boiled eggs on top ( it's best to make little divots for the eggs to rest in)
  • Add more of the mix, making sure you cover up the eggs well
  • Lay 3 (or however many you want) bacon medallions on top
  • Put in the oven at 160c for 30 minutes
  • If you want to, you can take it out at 15 minutes to drain any excess juices, then pop back in the oven
  • Leave to stand for a few minutes and serve with a big side of salad and fat free vinaigrette
